
I love eating seasonally especially in the autumn when there is such an abundance of sun-ripened fruit and veg. Eating home or locally-grown produce is not only good for you but it's also good for the environment reducing the energy required to transport it, store it or force-grow it out of season.
This pumpkin bread recipe is one of my favourites as it's so easy and tastes of autumn. So here you go:
1 cup mashed pumpkin
1 cup apple purée
1/2 cup maple syrup or agave nectar
1/2 cup olive oil
2 eggs
1 cup white flour and 1/3 whole wheat flour
1/3 cup oats
1 tsp baking soda and 3/4 tsp salt
As much cinnamon, nutmeg, and allspice as you like

-Whisk dry ingredients in one bowl and mix wet in another and then combine, stirring just until blended. Bake at 400 degrees F for about 25-30 minutes.
Decorate with some dehydrated apples and icing sugar.
